Slow Cooked Chicken with Dates
Serves 4
Ingredients
2 tsp ground cumin
1 tsp ground turmeric
1 tsp ground sweet paprika
1kg skinless chicken thighs
2 tbsp olive oil
1 onion, thinly sliced
4 garlic cloves, thinly sliced
400g tin chopped tomatoes
14 medjool dates, pitted and halved
Method
1. In a large bowl, combine the cumin, turmeric, paprika, and a good pinch of salt and pepper. Add the chicken thighs and toss well to coat evenly in the spice mixture.
2. Heat the olive oil in a large saucepan over medium heat. Add the onion and cook for about 7 minutes, until softened. Add the garlic and cook for another 2 minutes, stirring often to prevent burning.
3. Add the chicken to the pan and cook for about 6 minutes, turning occasionally, until lightly browned and the spices become fragrant.
4. Pour in the chopped tomatoes along with 375ml water. Stir to combine and bring to a gentle simmer. Reduce the heat to low, cover, and cook for about 40 minutes.
5. Add the dates and continue cooking, uncovered, for another 50 minutes or until the chicken is tender and the sauce has thickened.
6. Serve warm with cooked quinoa or rice.
