Tofu & Sesame Salad

This is a simple, comforting salad that works beautifully as a side dish alongside rice and other small plates. The silky tofu and nutty tahini dressing pair especially well with the lightly blanched spinach and toasted sesame seeds.

Serves 3

Ingredients

  • 200g baby spinach

  • 1 tbsp hulled tahini

  • 200g silken tofu

  • 2 tbsp mirin

  • 3 tbsp soy sauce

  • Pinch of sugar

  • 2 tsp sesame seeds

Method

1. Bring a large pot of water to the boil. Blanch the spinach for 1 minute, then drain and rinse under cold water to stop the cooking. Once cooled, squeeze out as much excess water as possible.

2. Place the tahini, tofu, mirin, soy sauce, and sugar into a mixing bowl and whisk together until smooth and combined.

3. Fluff up the spinach with your fingers (it will have compressed after being squeezed) and gently stir it through the tofu mixture.

4. Transfer to a serving bowl and sprinkle over the sesame seeds before serving.
