Beetroot & Yuzu Fizz

Makes 1 drink

Beetroot juice isn’t always the easiest to track down, but you’ll often have luck at a health food or wholefoods store. Once you have it, this strikingly coloured mocktail comes together quickly and has a refreshing, earthy tang.

The honey syrup is a cinch to make — just mix equal parts honey and hot water from the kettle, stir until dissolved, and let it cool.

Ingredients

  • 45ml beetroot juice

  • 30ml honey syrup

  • 15ml yuzu juice

  • 30ml ginger beer

  • 60ml tonic water

  • Mint sprig, to garnish

Method

  1. In an ice-filled shaker, combine the beetroot juice, honey syrup, and yuzu juice. Shake well.

  2. Strain into a Collins glass filled with fresh ice.

  3. Top with the ginger beer and tonic water, then give it a gentle stir.

  4. Garnish with a sprig of mint and serve immediately.
