Beetroot & Yuzu Fizz
Makes 1 drink
Beetroot juice isn’t always the easiest to track down, but you’ll often have luck at a health food or wholefoods store. Once you have it, this strikingly coloured mocktail comes together quickly and has a refreshing, earthy tang.
The honey syrup is a cinch to make — just mix equal parts honey and hot water from the kettle, stir until dissolved, and let it cool.
Ingredients
45ml beetroot juice
30ml honey syrup
15ml yuzu juice
30ml ginger beer
60ml tonic water
Mint sprig, to garnish
Method
In an ice-filled shaker, combine the beetroot juice, honey syrup, and yuzu juice. Shake well.
Strain into a Collins glass filled with fresh ice.
Top with the ginger beer and tonic water, then give it a gentle stir.
Garnish with a sprig of mint and serve immediately.
