Maple & Tahini Dressing

This is a really simple dressing to make, and I like to mix up a batch at the start of the week so I can drizzle a bit over my salad each day. It’s creamy, tangy, and just slightly sweet — and it only takes a few minutes to pull together.

Ingredients

  • 100g hulled tahini

  • 50ml lemon juice

  • 30ml maple syrup

  • 1 tsp salt

  • 40ml water (approx)

Method

  1. In a small bowl, whisk together the tahini, lemon juice, maple syrup, and salt until smooth.

  2. Add the water gradually, whisking as you go, until the dressing reaches your desired consistency. Depending on how thick your tahini is, you may need a little more or less water.

  3. Store the dressing in a clean jar (an old jam jar works perfectly) and keep it in the fridge.

  4. If the dressing thickens up after a few days, just stir in a splash of water and give it a good shake or stir before using.
